Drink 1997–2012
The three luxury-priced offerings from Penfolds include a spectacular 1993 Cabernet Sauvignon Bin 707. This opaque purple-colored wine exhibits a huge, jammy, blackcurrant, vanilla, licorice, and earthy-scented nose, as well as massive concentration of fruit, glycerin, and body. Readers will find plenty of sweet tannin in the awesomely-endowed finish. This blockbuster, monster-sized Cabernet Sauvignon is accessible because of its low acidity and ripe tannin. The formidable extract suggests it will drink well for 10-15+ years.

Deep crimson. Lovely cassis, herb garden, sage aromas with some cedar spice, marzipan notes. Supple, almost velvety smooth with developed cassis, dark chocolate, cedar flavours and long grainy tannins. Builds up al dente/grippy at the finish. "Dry leaf, mulberry, and gum. Black cherry, dark soy. Holding a lovely line. Rolling waves of fine, dusty tannins." (NR) Has lost its silage-like notes and emerged the other side. The magic of patience! 13.5% alc Adelaide Hills, Coonawarra, and Padthaway
