Drink 2009–2034
The 2005 Bin 707 Cabernet Sauvignon was aged for 16 months in 100% new American oak hogsheads. Already complex aromatically, scents of cedar, sage, clove, mineral, black currant, and blackberry waft from the glass. Smooth, layered, and bordering on opulent, this will be a long-lived Cabernet which should drink well for 25 years.

Deep crimson. Blackcurrant pastille, espresso, mocha aromas with mineral graphite notes. Inky deep with attractive cassis, blackberry pastille, espresso, marzipan, roasted coffee flavours, fine loose-knit firm graphite/chalky tannins, underlying mocha, marzipan notes, lovely inky density, and fresh mineral acidity. Builds up Claret-firm with a lovely tail of ripe berry fruits. "Elegant, graceful, and quite reserved with gently coating tannins, still yet to soften."
