Drink 2015–2031

The Bin 707 Cabernet Sauvignon was aged for 16 months in new American oak hogsheads. A glass-coating opaque purple, it displays aromas of pain grille, pencil lead, mulberry, spice box, and black currant. Medium to full-bodied and seriously structured, it has the fruit to complement its frame. On the palate, espresso and chocolate make an appearance along with layers of savory black fruits. Dense and exceptionally lengthy it will continue to unwind for another 6-8 years and drink well from 2015 to 2031.

Deep crimson. Lovely fresh inky dark chocolate, cassis, mulberry, sage, espresso aromas with grilled nuts and liquorice. Richly concentrated and Penfoldsian in style with beautiful blackcurrant, mocha cedar flavours, fine chocolaty tannins and lovely mineral/graphite length. Finishes chalky firm with plentiful dark berry fruits, some new oak notes and traces of eucalypt. "Coiled and reserved, but full and forward. There's absolute finesse here with a real sense of class." (GH) Still youthful, with decades ahead of it. A great vintage. 14.5% alc "Cherry chocolate, mulberry, and cassis with a little violet and leaf. Relatively transparent with a framework of fine prismatic tannins, tensile acidity, and a deft draping of flesh giving a beautifully lithe shape."
