Drink 2023–2040

The 2007 vintage follows on directly from the 2005 vintage release: 2006 was incredibly cold and wet, and few Cabernets made it out alive that season. It's the one vintage in the past 23 that most will attest to being the most challenging. Here, the 2007 Cabernet Sauvignon was in oak for a shorter time than ever before as well—only 15 months, as opposed to the more traditional 20 months for this cuvée. So, how does that look? Well, the wine is lighter in structural frame and texture, despite having gravitas (and cracked black peppercorns!) in the fruit department. The wine is dense and full, but the finish is fine and clear, the fruit sailing on the coattails of the tannins and the very last thing to leave the mouth. Lovely. 14% alcohol, sealed under screw cap.
